Ensō invites you to join us for an intimate evening gathering in the Boulder foothills, centered around seasonal ingredients, wild foods, and shared connection at the table.

This dinner is the evening portion of our full-day foraging experience and is now available to a limited number of additional guests.

Chef Kyle Mendenhall will prepare a three-course, family-style meal inspired by the Colorado landscape and the rhythms of early spring. The menu will highlight seasonal and foraged ingredients, thoughtfully sourced and prepared to reflect the place and moment. A neighborhood wild foraged apple beverage pairing included.

Guests will gather in a private home setting, creating a warm and relaxed atmosphere for conversation, food, and community.

This is a rare opportunity to experience the culinary side of Ensō’s work without attending the morning foray.

Ensō offers guided mushroom foraging experiences in the Boulder, Colorado area, combining hands-on education with seasonal culinary events. This spring mushroom foray in the Front Range includes expert instruction on fungal identification, ecology, and safety, followed by a locally inspired dinner. Our foraging classes are designed for both beginners and experienced participants looking to deepen their understanding of wild foods in Colorado.

Chef Kyle Mendenhall

Kyle Mendenhall is a classically trained chef with over 20 years of experience in the food and beverage industry and a veteran of the Colorado culinary scene.

Throughout his career, he has worked across both large-scale and independent kitchens, developing a reputation for ingredient-driven cuisine, strong relationships with local farmers, and a deep respect for sourcing and seasonality. His cooking blends traditional techniques with a modern approach, often incorporating foraged and wild ingredients.

As the Chef and Partner at Arcana in Boulder, Colorado, Mendenhall helped lead a team that received recognition from publications including The New York Times and 5280 magazine, which named the restaurant among the Top 25 in the state.

An avid outdoorsman and forager, Kyle often cooks over open fire and in remote environments. He has collaborated with organizations such as Meadowlark Farm Dinners, Outstanding in the Field, and the Brewers Association, along with numerous outdoor and adventure-focused brands.
