Ensō invites you to a rare, two-part immersive experience in the Colorado Front Range. This experience begins in the forest and ends at the table.

Start your day in the foothills with renowned mycologist Dr. Gordon Walker (Fascinated by Fungi). You will explore a seasonal riparian forest while learning the foundations of mushroom identification, fungal ecology, and how to observe the landscape with greater awareness and confidence.

After the morning foray, take time to rest and reset before joining us again in the evening.

That night, you will gather in a private home in the Boulder foothills for a three-course, family-style dinner prepared by Chef Kyle Mendenhall. The menu will highlight seasonal and foraged ingredients, offering a direct connection between the land you explored and the meal you share.

This is more than a class. It is a full-day experience connecting land, learning, and food.

Preparation

Come dressed for variable spring mountain conditions. Wear long pants, sturdy footwear, and layers. Bring water, snacks, and lunch if needed. Terrain may include uneven ground and moderate hiking.
