Enso Farm and Forage invites you to a full day with one of foraging and fermentation's most compelling educators.
Join Gabrielle Cerberville, known widely as the Chaotic Forager and the Internet's Mushroom Auntie, for a guided morning foray across the Colorado Rockies, followed by a hands on evening fermentation workshop in which she will show you how to transform what the forest gives you into something that lasts.

About the Evening Class
Explore the art and science of fermentation while learning how to transform, enhance, and extend the life of your foraged finds and especially mushrooms. The class covers two accessible and practical methods, lacto fermentation and vinegar making. You will learn the science behind salt brines, how to use mushrooms safely in fermentation, and how to harness acetobacter to make exceptional mushroom vinegars. You will leave with your own fermentation projects to take home, a clear understanding of fermentation basics, recipes, troubleshooting tips, and ideas for using fermented mushrooms in dressings, marinades, sauces, broths, and cocktails. Snacks will be served.
About Gabrielle Cerberville
Gabrielle Cerberville, known as the Chaotic Forager and the Internet's Mushroom Auntie, is a celebrated foraging educator, community mycologist, and climate advocate with nearly two million followers across social media platforms. She has given keynotes, classes, and led forays across the country. A current PhD student at the University of Virginia in Music Composition and Computer Technologies, Gabrielle researches the intersection of art, science, and our responsibility to understand, protect, and communicate with the natural world. A note on foraging: we cannot guarantee the number or variety of mushrooms we will encounter. That uncertainty is part of what makes this real.
Come dressed for variable mountain conditions. Wear long pants, sturdy footwear, and layers. Bring water, snacks, and lunch for the morning. Terrain may include uneven ground and some elevation change.
A note on class minimums: if fewer than 5 students are registered, the class may be canceled. Registered students will be notified at least 48 hours in advance and refunded in full.
Cancellation and Transfer Policy
Full refund 14 or more days before the event.
50% refund or full credit 7 to 13 days before the event.
Full credit, no refund 3 to 6 days before the event.
No refund or credit within 72 hours of the event.
Tickets are transferable to another person at any time at no charge. Foray location credits are issued at the value of your original ticket, valid for 12 months, subject to availability, and non-refundable. If the new event is higher in price, the difference is due at booking.
Ensō Farm and Forage reserves the right to reschedule or cancel any class due to unforeseen circumstances including scheduling conflicts, weather, or access limitations. Registered students will be notified as soon as possible and offered a full credit or refund at their preference.
