Fermentation Workshop with Gabrielle Cerberville | August 17 | Enso Farm and Forage
Enso Farm and Forage invites you to an evening at the fermentation table with one of the country's most engaging mushroom educators.
Join Gabrielle Cerberville, known as the Chaotic Forager and the Internet's Mushroom Auntie, for a hands on fermentation workshop focused on transforming mushrooms and foraged ingredients into something that lasts. The class covers two practical methods, lacto fermentation and vinegar making.
You will learn the science behind salt brines and how beneficial bacteria preserve and transform ingredients. You will learn how to use mushrooms safely in fermentation, how to balance them with herbs, aromatics, vegetables, and spices, and how to harness acetobacter to brew exceptional mushroom vinegars. You will leave with your own fermentation projects to take home, a clear understanding of fermentation basics, recipes, troubleshooting tips, and practical ideas for using fermented mushrooms and mushroom vinegars in dressings, marinades, sauces, broths, and cocktails.
This class is designed for beginners and curious cooks alike. Snacks will be served.
This ticket is for the evening fermentation class only. If you would like to join us for the morning foray in the Colorado Rockies with Gabrielle as well, the full day combo is the best value.
