Enso invites you to a complete day in the field and at the table.
Join special guest Orion Aon, founder of Forage Colorado, naturalist, and one of the most trusted foraging educators on the Colorado Front Range, for a guided summer mushroom foray across the Colorado Rockies. By mid-July the season should be building momentum, and what we find will depend on the precipitation and conditions leading up to the day. Orion will teach identification, fungal and plant ecology, and how to read a living landscape with the precision of someone who has spent years studying these mountains. This is expert-level instruction made accessible to all levels.
That evening, Chef Kyle Mendenhall takes it from the field to the table in a private Boulder County home. The menu reflects what the season and the foragers provide, supplemented by the finest local farms and producers we trust.
This ticket includes both the morning foray and the evening dinner and is the best value for a full day with us.
A note on foraging: we cannot guarantee the number or variety of mushrooms we will encounter. That uncertainty is part of what makes this real. What we can guarantee is an exceptional day in the Colorado Rockies followed by an outstanding meal.

Orion Aon is the founder of Forage Colorado and holds a degree in Natural Resource Management from Colorado State University. He has spent years guiding foragers and naturalists across the Colorado Front Range and Rocky Mountains, building one of Colorado's most respected foraging education programs. About Chef Kyle Mendenhall
Kyle Mendenhall is a classically trained chef with over 20 years of experience in the Colorado culinary scene. As Chef and Partner at Arcana in Boulder, he led a team recognized by The New York Times and named among Colorado's Top 25 restaurants by 5280 magazine. His cooking is ingredient-driven, deeply seasonal, and rooted in relationships with local farmers and foragers.
Come dressed for variable mountain conditions. Wear long pants, sturdy footwear, and layers. Bring water, snacks, and lunch for the morning. Terrain may include uneven ground and some elevation change.
Cancellation and Transfer Policy
Full refund 14 or more days before the event. 50% refund or full credit 7 to 13 days before the event. Full credit, no refund 3 to 6 days before the event. No refund or credit within 72 hours of the event.
Tickets are transferable to another person at any time at no charge. Foray location credits are issued at the value of your original ticket, valid for 12 months, subject to availability, and non-refundable. If the new event is higher in price, the difference is due at booking.
Enso Farm and Forage reserves the right to reschedule or cancel any class due to unforeseen circumstances including scheduling conflicts, weather, or access limitations. Registered students will be notified as soon as possible and offered a full credit or refund at their preference.
